Mr. Freddy Correa decided to start his farm in 2018, La Primavera in Bajo Encanto. This coffee is meticulously prepared with a 24 hour pre-fermentation in cherry, followed by a 36 hour fermentation in mucilage, and finally finishing the process by sun-drying in racks for 15 days. I suppose you could call this a natural and honey aerobic? Regardless of whatever fancy terminology you decide is best, we feel this coffee reflects everything we are looking for in a pink borbon, beautiful fruit flavors, clean and crisp notes that linger on your pallet due to this coffees smooth body and rewarding finish.
